Tuscan chicken and gnocchi skillet

A hearty and flavorful Tuscan chicken and gnocchi skillet featuring tender chicken, creamy sun-dried tomato sauce, and pillowy gnocchi for a perfect weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 package (16 oz) potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup baby spinach leaves
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through, about 6-8 minutes.
  2. Add garlic and sun-dried tomatoes to the skillet and sauté for 1-2 minutes until fragrant.
  3. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  4. Add gnocchi to the skillet and cook according to package instructions, usually 3-4 minutes, gently stirring occasionally.
  5. Once gnocchi is tender and sauce has thickened, stir in baby spinach and Parmesan cheese. Cook for another 1-2 minutes until spinach wilts and cheese melts.
  6. Taste and adjust seasoning with more salt and pepper if needed.
  7. Garnish with fresh basil leaves and serve hot.

Notes

For an extra burst of flavor, add a pinch of crushed red pepper flakes when sautéing the garlic and sun-dried tomatoes.
