Spiced Gingerbread Cheesecake with Caramel Glaze

  • 1 1/2 cups gingerbread cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup brown sugar, packed
  • 3 large eggs
  • 1/2 cup molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, combine gingerbread cookie crumbs and melted butter. Press mixture firmly into the bottom of the springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese until smooth. Add brown sugar and mix well.
  4. Beat in eggs one at a time, then add molasses, ginger, cinnamon, cloves, nutmeg, and vanilla extract until fully combined.
  5. Stir in sour cream until the batter is smooth. Pour over the crust in the pan.
  6. Bake for 55–65 minutes or until the center is almost set but still slightly jiggly.
  7. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
  8. Remove from oven, run a knife around the pan edges to loosen, then cool completely at room temperature. Refrigerate for at least 4 hours or overnight.
  9. To make the caramel glaze, combine granulated sugar and salt in a saucepan over medium heat. Stir constantly until sugar melts and turns amber.
  10. Carefully add butter, stirring until melted, then slowly add heavy cream, stirring continuously. Remove from heat and cool slightly.
  11. Pour caramel glaze over chilled cheesecake before serving.

Notes

For an added crunch, sprinkle chopped toasted pecans on top of the caramel glaze just before serving.
