Ingredients

Scale
  • 3 cups cooked chicken, shredded or cubed
  • 1 cup red seedless grapes, halved
  • 1/2 cup pecans, toasted and chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • Optional: 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large bowl, combine the cooked chicken, halved grapes, toasted pecans, celery, and red onion.
  2. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss until everything is evenly coated.
  4. Stir in chopped parsley, if using, for added freshness and color.
  5. Cover and refrigerate the salad for at least 30 minutes to allow flavors to meld.
  6. Serve chilled, either on a bed of fresh greens, as a sandwich filling, or with crackers.

Notes

For a lighter twist, substitute half of the mayonnaise with extra Greek yogurt; you can also add sliced almonds or dried cranberries for different textures and flavors.
