Pineapple Chicken and Rice

A flavorful and tropical Pineapple Chicken and Rice dish that combines tender chicken with juicy pineapple chunks and fragrant rice for a quick and satisfying meal.

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup white rice
  • 1 1/2 cups chicken broth
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup diced bell peppers (red or green)
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper, to taste
  • Optional garnish: chopped cilantro or parsley

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the garlic, ginger, and diced bell peppers; sauté for 2 minutes until fragrant.
  4. Add the rice and stir to coat with oil and veggies.
  5. Pour in the chicken broth and soy sauce, bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  7. Stir in the cooked chicken and pineapple chunks, cook for an additional 2-3 minutes to heat through.
  8. Remove from heat, garnish with chopped green onions and optional cilantro or parsley before serving.

Notes

For extra flavor, try adding a splash of toasted sesame oil or a pinch of red pepper flakes when cooking the chicken.
