Lemon Pepper Chicken Thighs

Tender and flavorful chicken thighs seasoned with zesty lemon and cracked black pepper, perfect for a quick and delicious dinner.

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 teaspoon cracked black pepper
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, lemon zest, lemon juice, cracked black pepper, salt, garlic, and dried oregano.
  3. Pat the chicken thighs dry with paper towels and place them in a baking dish.
  4. Brush the lemon pepper mixture evenly over each chicken thigh, making sure to get some under the skin.
  5. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  6. Remove from oven and let rest for 5 minutes.
  7. Garnish with chopped fresh parsley before serving if desired.

Notes

For an extra crispy skin, broil the chicken thighs for the last 2-3 minutes of baking, watching carefully to prevent burning.
