Ground Beef and Vegetable Casserole with Cheddar

A hearty and comforting casserole combining savory ground beef, mixed vegetables, and melted cheddar cheese, perfect for an easy weeknight dinner.

  • 1 lb ground beef
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup green beans, chopped
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  3. Add ground beef, cook until browned. Drain excess fat.
  4. Stir in carrots, green beans, corn, diced tomatoes, beef broth, thyme, paprika, salt, and pepper. Simmer for 5 minutes.
  5. Transfer mixture to a casserole dish and top evenly with shredded cheddar cheese.
  6. Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, add a sprinkle of chopped fresh parsley on top before serving or mix in some cooked rice for a heartier dish.
