Greek Stuffed Chicken

Greek Stuffed Chicken features tender chicken breasts filled with a flavorful mix of spinach, feta cheese, and herbs, offering a delicious taste of Mediterranean cuisine in every bite.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Toothpicks or kitchen twine, for securing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture.
  5. Secure the openings with toothpicks or kitchen twine to keep the filling inside.
  6. Season the outside of the chicken breasts with salt, pepper, and a little extra oregano.
  7. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  8. Remove toothpicks or twine before serving. Let rest for 5 minutes and serve warm.

Notes

For an extra burst of flavor, serve with a drizzle of tzatziki sauce and a side of roasted vegetables or Greek salad.
