Garlic Butter Shrimp Scampi with Linguine Pasta

  • 8 ounces linguine pasta
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 5 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  3. Add minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  4. Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  5. Pour white wine or chicken broth into the skillet and simmer for 2 minutes, scraping up any browned bits.
  6. Stir in remaining 2 tablespoons of butter and lemon juice until butter melts and sauce is smooth.
  7. Return the shrimp to the skillet and toss to coat in the sauce.
  8. Add cooked linguine and chopped parsley to the skillet, tossing everything together to combine and heat through.
  9. Adjust seasoning with salt and pepper as needed, then serve immediately.

Notes

For extra richness, garnish with freshly grated Parmesan cheese or add a pinch of crushed red pepper for a spicy kick.
