1/2 cup (115g) unsalted butter
8 oz (225g) dark chocolate, chopped
3/4 cup (150g) granulated sugar
1/4 cup (50g) brown sugar, packed
3 large eggs
1 tsp vanilla extract
1/2 cup (65g) all-purpose flour
1/4 cup (25g) unsweetened cocoa powder
1/4 tsp salt
Sea salt flakes, for sprinkling
Instructions
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
Melt the butter and chopped dark chocolate together in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let cool slightly.
Whisk in granulated sugar and brown sugar into the chocolate mixture until well combined.
Add eggs one at a time, whisking thoroughly after each addition. Stir in the vanilla extract.
Sift together the flour, cocoa powder, and salt. Gently fold into the wet ingredients until just combined—do not overmix.
Pour batter into the prepared pan and smooth the top with a spatula.
Sprinkle the surface evenly with sea salt flakes.
Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with moist crumbs but no wet batter.
Allow brownies to cool completely in the pan on a wire rack before lifting them out using the parchment overhang.
Cut into 12 squares and serve.
