  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In a separate large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. In a small bowl, mix the 1/4 cup sugar and 1 teaspoon cinnamon for the coating.
  7. Roll dough into 1.5-inch balls, then roll each ball in the cinnamon-sugar coating until fully coated.
  8. Place coated dough balls onto the prepared baking sheet about 2 inches apart and gently flatten slightly with the bottom of a glass.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra indulgent treat, drizzle the cookies with melted chocolate or a cinnamon glaze once cooled.
