Blueberry Banana Protein Pancakes

Fluffy and nutritious, these Blueberry Banana Protein Pancakes combine the natural sweetness of fruit with a protein-packed boost, perfect for a wholesome breakfast or post-workout meal.

  • 1 ripe banana
  • 1/2 cup fresh or frozen blueberries
  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese or Greek yogurt
  • 2 large eggs
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • A pinch of salt
  • Cooking spray or a small amount of oil for the pan

Instructions

  1. In a blender, combine the banana, blueberries, rolled oats, cottage cheese (or Greek yogurt), eggs, protein powder, baking powder, cinnamon, vanilla extract, and salt.
  2. Blend until the mixture is smooth and well combined.
  3. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil.
  4. Pour about 1/4 cup of batter per pancake onto the skillet.
  5. Cook for 2-3 minutes until bubbles start to form on the surface and the edges look set.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  7. Remove from the pan and keep warm; repeat with remaining batter.
  8. Serve warm, topped with extra blueberries, banana slices, or a drizzle of maple syrup if desired.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. You can also swap blueberries for your favorite berries or add nuts for added crunch.
