  • 4 large baking potatoes
  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork and rub with olive oil. Bake directly on oven rack for 45-60 minutes or until tender.
  2. While potatoes bake, heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
  3. Add diced onion and green bell pepper to the beef; cook until softened, about 5 minutes.
  4. Stir in tomato sauce, ketchup, Worcestershire sauce, brown sugar, mustard, garlic powder, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  5. When potatoes are done, let them cool slightly, then slice each potato in half lengthwise and carefully scoop out the insides into a bowl, leaving a sturdy shell.
  6. Mix the potato flesh into the beef mixture until combined.
  7. Fill each potato skin with the sloppy joe beef and potato mixture. Top with shredded cheddar cheese.
  8. Return stuffed potatoes to the oven and bake for an additional 10 minutes, or until cheese is melted and bubbly.
  9. Serve hot and enjoy!
