Beef Shepherd Pie with Sweet Potato Mash

A comforting beef shepherd pie topped with creamy sweet potato mash, combining rich flavors and a healthy twist on a classic dish.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tbsp olive oil
  • 3 large sweet potatoes, peeled and chopped
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter. Season with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Add onions and garlic; sauté until translucent.
  4. Add ground beef and cook until browned. Drain excess fat.
  5. Stir in tomato paste, mixed vegetables, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Simmer for 10 minutes until mixture thickens.
  6. Transfer beef mixture to a baking dish and spread evenly.
  7. Top with sweet potato mash, smoothing the surface with a spoon.
  8. Bake in preheated oven for 20 minutes until the top is slightly golden.
  9. Remove from oven, let cool for 5 minutes, then serve.

Notes

For an extra crispy topping, sprinkle grated cheddar cheese over the sweet potato mash before baking.
