Authentic Chicken Masala Curry

  • 1 lb (450g) boneless chicken thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 medium tomatoes, pureed
  • 1/2 cup plain yogurt
  • 2 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1 cup water or chicken broth
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  3. Stir in turmeric, cumin, coriander, chili powder, cinnamon, and garam masala. Cook spices for 1 minute.
  4. Add chicken pieces and cook until they are no longer pink, about 5-7 minutes.
  5. Pour in the pureed tomatoes and cook for 5 minutes, stirring occasionally.
  6. Reduce heat to low and stir in the yogurt slowly, mixing well to avoid curdling.
  7. Add water or chicken broth, season with salt, and simmer uncovered for 20 minutes until chicken is cooked through and the sauce thickens.
  8. Garnish with fresh cilantro leaves and serve hot with rice or naan.

Notes

For extra richness, add a splash of cream before serving or garnish with toasted cashews for added texture.
