Asparagus and Orzo Salad with Feta Cheese

A fresh and vibrant asparagus and orzo salad tossed with tangy feta cheese, perfect as a light lunch or a flavorful side dish.

  • 1 cup orzo pasta
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Blanch the asparagus pieces in boiling water for 2-3 minutes until bright green and tender-crisp, then immediately transfer to an ice bath to stop cooking. Drain well.
  3. In a large mixing bowl, combine the cooled orzo, asparagus, red onion, feta cheese, and parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Adjust seasoning as needed. Chill the salad for 15-20 minutes before serving for best flavor.

Notes

For added texture, sprinkle toasted pine nuts or walnuts on top before serving. This salad pairs wonderfully with grilled chicken or fish for a complete meal.
