20-minute Balsamic Orzo Salad with Spinach and Feta

This quick and flavorful balsamic orzo salad combines tender spinach, creamy feta, and tangy balsamic dressing for a refreshing and satisfying meal in just 20 minutes.

  • 1 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chopped fresh basil (optional)

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper to make the dressing.
  3. Add the cooled orzo, chopped spinach, sun-dried tomatoes, and crumbled feta to the bowl. Toss everything gently to combine and coat with the dressing.
  4. Stir in fresh basil if using. Adjust seasoning with salt and pepper as needed.
  5. Serve immediately or chill for 10 minutes before serving for a refreshing cold salad.

Notes

For added protein, toss in grilled chicken or chickpeas. This salad is perfect as a light lunch or a side dish for dinner.
